Friday Feast: Tomato, Basil and Moz Salad

One night this week when JD was working very late (and they provide dinner for him), I put Maggie down to sleep and realized I hadn’t had dinner yet myself. I was starving but was overall warm from the hot day, running errands, and doing chores. I looked around in my fridge and pulled together this salad, and it ended up wonderfully. Here’s what you need:
Ingredients
cherry tomatoes (you could probably use larger tomatoes, but I prefer less tomato juice)
fresh, soft mozzarella
basil (I used the ripe stuff from my basil plant.)
extra virgin olive oil
salt and pepper
chicken (optional)
- In a bowl, mix halved cherry tomatoes, shredded basil slices, and small mozzarella cubes.
- Stir together EVOO, salt, and pepper and toss in the bowl.
- Add grilled chicken for extra protein…. I bet summer sausage would also be good with this. Baby spinach would be a great addition as well.
What you get is a cool, fresh, and healthy summer salad… and it’s pretty!
