I made some not-so-sloppy joes last night for a big family dinner, and I realized that I should share this good summer dinner recipe with you, because it’s fairly yummy and healthy. If you want to know, I got it from “Real Simple” magazine:

Not-So-Sloppy Joes

1tbl olive oil
1 small yellow onion, finely chopped
1 clove garlic, minced
1 red bell pepper, finely chopped (I like smallish chunks)
1 pound ground beef
1 6oz can tomato paste
1 1/2 tsp chili powder
1 tsp cumin
1/8 tsp fresh ground pepper
1/8 tsp cinnamon
1 tsp salt
hamburger buns
sour cream and cheddar cheese for toppings
Heat the oil in large saucepan over medium heat. Add onion, garlic and red pepper. Saute until fragrant, about 3 minutes. Add ground beef and brown, about 5 minutes. Stir in tomato paste, chili powder, cumin, black pepper, cinnamon and salt. Simmer, stirring occasionally, until the sauce has thickened slightly, about 12 minutes. Spoon onto the buns, sprinkle with cheddar, and top each sandwich with a dollop of sour cream.

Yum! And, one of JD’s favorite.
