Friday Feast: No Bake Cookies

June 5, 2009

When I want to make a dessert that’s quick and easy, No Bake Cookies do the trick. They are great for the summer because they don’t require you to heat up your kitchen by turning on the oven. Here’s my tried and true recipe which makes about two dozen.

No Bake Cookies

Preparation Time: about 10 minutes

Cooking Time: 20 minutes (“Cooking” for this recipe involves merely letting it sit.)

Cleaning Time: 5 minutes

Ingredients:

2 cups sugar

1/2 cup milk

1 stick margarine

1/4 cup cocoa (optional and not something I’ve tried yet)

3 cups oatmeal

1/2 cup peanut butter

  • Boil the first three ingredients in a saucepan for two minutes.
  • Add remaining ingredients and mix together.
  • Spoon onto wax paper in individual cookie sizes.
  • Let cool for at least 15 minutes.

And you’re done! How painless is that? They turn out wonderfully and are the perfect treat for casual occasions.

Random, but “No Bake” is one of my nicknames. Not sure how to explain it, but I just thought I might share. :)
    Also, these look scrumptious.

You have to try a batch with the Cocoa. They are wonderful.
