Friday Feast: Corn Pudding

December 4, 2009

If I could make up a song about corn pudding, I would. It would probably have something in the lyrics about how sweet and wonderful it is, how amazing it makes your house smell while it’s in the oven, and how — even though it’s perfect for Christmas — can be made all year round. It would be a lovely tune.

And what makes the sound even sweeter is how easy it is to make. Here is one of my all-time favorite recipes and a perfect side to your holiday feast!

Aunt Dare’s Corn Pudding

Preparation Time: 10 minutes

Cook Time: 45 minutes

Cleanup Time: 5 minutes

Ingredients

2 14.5 oz cans of creamed corn

3 eggs beaten

1/2 cup sugar

4 Tbsp cornstarch

2 tsp vanilla

1 1/2 cup milk

1/4 cup melted margarine

dash of salt

nutmeg

  • Preheat the oven to 375.
  • Mix sugar and cornstarch together.
  • Beat eggs lightly and add to sugar mix.
  • Add rest of ingredients and sprinkle nutmeg on top.
  • Bake 45 minutes. (It will be shakey in the middle but will jell after sitting awhile.)
  • Amazing. Wonderful. A huge crowd-pleaser.
