Friday Feast: Lasagna

With the holidays over, I have a lot of recipes that I can’t wait to show you… things I tried over the break, as well as some great guest Friday Feasts! Until then, I want to give you one of my tried-and-true recipes that I use all the time, especially when feeding large groups. My wonderful mother-in-law (hi Mama Stu!) gave me this lasagna recipe, and I have used it countless times with rave reviews. It’s homemade, wonderful, and hearty… great for a cold night!

Friday Feast: Lasagna

Preparation Time: 45 minutes (Sometimes I’ll prepare this dish the night before, only to bake it after it sits in the fridge for a day… I think it makes it even better!)

Cook Time: 30 minutes

Cleanup Time: 10 minutes


1 pould mozarella cheese, shredded

1 box noodles (I use the no-bake kind)

2 pounds hamburger

1 large can tomatoes (28oz)

1 can tomato sauce

1 can tomato paste

24 oz cottage cheese

1 med onion

1/2 bell pepper

garlic salt

1/8 c sugar

salt and pepper

  • Brown hamburger, saute pepper and onion with hamburger.
  • Add tomatoes and seasonings and simmer for 30 minutes.

  • Cook noodles. (But I use the no-bake kind…. so skip that step if you did too!)
  • Layer meat sauce, noodles, 24 oz carton of cottage cheese, and 1 pound mozarella cheese.

  • Bake 30 minutes at 375 degrees.

It’s so good and can feed at least ten people.  That’s amore!
