Friday Feast: Breakfast Cereal Dessert Bars
Imagine the scenario: some friends are stopping by tonight and it’s too late to run to the grocery store. You look in your pantry and see you have the basics but not enough to make cookies or brownies. But you do have… cereal and nuts. Why not whip up these No Bake Cereal Bars?
I first got this idea from a similar creation I had at Fido, a favorite coffee shop here in Nashville. I wondered how they combined corn flakes, peanuts, and other random ingredients into chocolatey goodness. So, I looked around AllRecipes to find something similar. So, I made a combination of both into this mess of a Friday Feast.
No Bake Cereal Bars
Preparation time: 15 minutes
Cook time: no baking required, but some wait time is needed for the bars to cool and set
Cleanup time: 15 minutes (it gets messy!)
4 cups corn flakes (frosted flakes also work well here)
2 cups peanuts (dry roasted or lightly salted)
1/2 cup walnuts (cashews actually may be good too)
2 cups chocolate chips
1 cup light corn syrup
1 cup white sugar
1/2 cup brown sugar (optional)
1 1/2 cup creamy peanut butter (maybe more depending on taste)
1 tsp vanilla extract
Other optional ingredients: coconut, white chocolate chips, rice crispies, Chex, M&Ms, Reese’s Pieces, and (maybe) marshmallows
- Grease 10×15 pan.
- In a large bowl, toss together corn flakes, peanuts and walnuts. (No chocolate chips yet… a critical mistake I made when early experimenting.)
- In a saucepan over medium heat, stir together corn syrup and sugars. Bring the mixture to a boil and cook until sugar is completely dissolved. Remove from heat and quickly stir in peanut butter and vanilla.
- Pour the mixture into the bowl with the cereal mixture. Mix well and quickly. Add chocolate chips.
- Press into the greased pan and let stand until set.
