Friday Feast: Spice Cake

I’m skipping off to Houston today on business! (I’ve always wanted to say that.) But, I really am! I’m working a career seminar in Houston (and yes, still wearing heels). Hilariously enough, I’m singing the “Dallas” theme song. I guess I’m in the right state, at least.

So, until Christmas, Friday Feasts will be all about the holidays… food you can give to people, dishes you can bring to parties, and recipes specifically for that big meal you’re making. So, let’s dive in to one of my all-time favorite recipes.

I cannot believe I’ve never featured this recipe yet on Schmate. It is one of my all-time, go-to recipes that is absolutely perfect. A friend explained that it tastes like a cake donut. And he was right… it is quite yummy.

I think a lot of the reason this recipe is awesome is the secret special ingredient: plum baby food. It makes the cake so moist. Unfortunately, since I started making this cake six years ago, the giants in baby-food making stopped thinking plum is a great mix-in, and now they only make plum-apple baby food. It’s still hard to find, but be sure to find plum somewhere.

Spice Cake

Prep time: 15 minutes

Cook time: 45-50 minutes

Cleanup time: 10 minutes

Ingredients

3 eggs

2 cups sugar

2 cups self-rising flour

1 cup vegetable oil

2 jars, plum baby food

1 tsp cinnamon

1 tsp nutmeg

1 tsp allspice

  • Mix all ingredients well. (I use my KitchenAid mixer.)
  • Pour into well-greased bundt pan.
  • Bake at 350 degrees for 45 minutes.
  • Enjoy how amazing your house smells while it bakes.
  • Let cool for at least 5 minutes before popping the cake out of the pan.
