Friday Feast: Bacon-wrapped Stuffed Dates

Another beach weekend recipe that we put together over Mother’s Day were these yummy bacon-wrapped, cheese-stuffed dates. Yes please.

Here are the basics.


Dates (20)

Bacon slices, cut into thirds

Cheese of your choosing (we had havarti and cheddar)

  • Preheat oven to 350.
  • Cook bacon in oven for 7 minutes. Let cool.
  • Cut a small slit into each date, and insert cheese.
  • Wrap cheese-stuffed date with bacon.
  • Cook in oven for additional 8-10 minutes. May need longer, may need less. (Wine clouded our time-watching ability… as did Mom opening up the oven every two minutes!!)

Obviously, they were a big hit and perfect with red wine!

    Um, yes PLEASE! I bet this would also be amazing with goat cheese or blue cheese. Mmmm…

    If you drizle a little bit of maple syrup on tm after you take them out 0f the oven, they are even better. I usually cook them in maple syrup bacon–easier that way.
