Friday Feast: JD’s Marinade
Little known fact about JD: he is quite creative in making meat marinades. It could be his long appreciation of good red meat, bacon and sausage. Or perhaps it’s our current obsession with all things Top Chef. Maybe JD’s just a genius in the kitchen. But that man can whip up a good marinade.
During our adventures in grilling last week, JD was in charge of marinating the meat pre-grill. If there’s a good chance we’ll mess up the grilling, we at least need to mask the burnt taste with a coating of yummy sauces.
Here’s his concoction:
sweet BBQ sauce (typically Sweet Baby Ray’s or Sticky Fingers)
minced garlic (we use the kind pre-minced in the jar)
- Mix together sauces.
- Put thawed meat in a plastic bag and pour the sauce over the meat, into the bag.
- Let sit in refrigerator for at least 3-4 hours (best overnight).
I definitely recommend it. It’s a great mix of sweet, spicy and tangy.
