Guest Post Friday Feast: Pumpkin and Spice Pancakes

Jessica is back! Here, she details a very very yummy recipe for Pumpkin and Spice Pancakes. Yes please! (Don’t forget to follow her blog if you want to see more of her family travels and fun projects.)

I love fall and winter because I love all things pumpkin: pumpkin pie, pumpkin soup, pumpkin seeds, pumpkin spiced lattes, pumpkin pancakes. There are many pumpkin pancake recipes out there, but I think the best one if the Joy of Cooking “Pancake Recipe” that I have fooled around with and made into Pumpkin & Spice Pancakes.

1 c. All Purpose Flour
1 T Baking Powder
1/4 tsp. salt
2 T sugar (optional)
2 eggs
1 – 1 1/2 c. milk
2 T melted butter
1 tsp vanilla extract
1 c. pumpkin
1 tsp. cinnamon
1 tsp pumpkin spice
grated nutmeg (dash)
  • Heat griddle to 375 or heat skillet on stove.
  • Mix all dry ingredients together with a whisk. Whisk eggs in a separate bowl and add milk, vanilla, and eggs. Mix dry & wet ingredients together with as few strokes as possible. Mixing pancake batter too much will lead to them being tough, not light and fluffy. Then fold in pumpkin until folded throughout mix.
  • Grease griddle or pan with butter and place about 1/3 cup of pancake batter on the griddle spacing each pancake about 1″. Flip when bottom is golden brown and pull off the griddle when the pancake has completely cooked.
  • Top with butter, maple syrup, chocolate chips, walnuts, etc.
